Food safety

Use separate utensils for raw and ready-to-eat food

Use clearly distinguishable boards, knives, and tongs for raw and ready-to-eat food.

High-priority reminder

Last reviewed: 2026-09-09

Use separate utensils for raw and ready-to-eat food. Wrong action: Using the same unwashed knife and board for raw meat, then fruit or cooked food. Correct action: Separate utensils by colour or marking; if sharing is unavoidable, wash and sanitise first.

Why it matters

An unwashed shared utensil can transfer raw-food germs directly to food that will not be cooked.

Wrong action

Using the same unwashed knife and board for raw meat, then fruit or cooked food.

Correct action

Separate utensils by colour or marking; if sharing is unavoidable, wash and sanitise first.

What to do

  1. Set out designated raw and ready-to-eat utensils first.
  2. Do not swap knives, boards, or tongs during preparation.
  3. Wash thoroughly with hot water and detergent, then air-dry.

If something happens

If anyone becomes severely ill, vomits repeatedly, has breathing difficulty, or becomes unresponsive after eating, stop serving, call 999, and keep packaging and remaining food.
