  • 300 g Lean pork
  • 3 Preserved eggs
  • 20 g Ginger
  • 3 Scallions
  • about 2.4 litres Water

Lean pork marinade

  • 2 teaspoons light soy sauce (Check soy, wheat and sodium.)
  • 1 teaspoon sesame oil (Check sesame allergen.)
  • 1 teaspoon cooking oil (Keeps strips separate.)
  • 1/4 teaspoon white pepper (used for Lean pork marinade)

Congee seasoning

  • 3/4 teaspoon salt (Start with 1/2 teaspoon and taste later.)
  • 1/4 teaspoon white pepper (used for Congee seasoning)

Final seasoning

  • up to 1 teaspoon sesame oil (Add sparingly after heat is off.)
  • a little salt (Taste after pork and egg.)
  • a little white pepper

Wash and soak rice: Rinse gently 2–3 times, soak 20 minutes and drain.

Inspect and cut pork: Thaw in the refrigerator, inspect, cut even narrow strips on the raw board; never wash.

Marinate cold: Mix soy, sesame oil, cooking oil and pepper; cover and refrigerate 20–30 minutes.

Inspect and cut eggs: Check package, shell and smell; cut on cooked-food board and divide evenly.

Start congee: Boil 2.2 litres water on high; add rice and half ginger.

Slow simmer: Return to boil, turn low, leave lid ajar and stir bottom every 5–8 minutes for 25–30 minutes.

First egg portion: Add when rice starts blooming; simmer 15 minutes.

Naturally thicken: Cook 10–15 minutes, stir more often; add hot water only, never cornstarch, flour or cream.

Season base: Add salt and pepper; it must flow naturally from a ladle.

Cook pork at the end: Add strips gradually to gentle simmer and immediately separate; cook 3–5 minutes.

Second egg and safety check: Add remaining egg and ginger; verify thickest pork is at least 71°C and fully opaque.
