Sweet Corn with Pork Cubes
粟米肉粒

Recipe overview
Sweet Corn with Pork Cubes is a common children's dish in Hong Kong families. It tastes slightly sweet and savoury and goes very well with rice. The method is simple and the ingredients are easy to buy. You can use canned cream corn or corn kernels. New helpers should cut the pork into even small cubes, marinate it first, avoid overcooking the pork, and keep the corn sauce smooth, not too dry or too watery.

Steps

Step 1
Prepare the Ingredients
Prepare the lean pork, cream corn, corn kernels, egg and seasonings first.

Step 2
Cut Pork Cubes
Cut the pork into small cubes. Try to keep the pieces even so they cook more easily.

Step 3
Marinate Pork
Add light soy sauce, sugar, cornstarch, water, white pepper and a little oil. Mix well and marinate for about 10 minutes.

Step 4
Prepare Corn
Open the can of cream corn and pour it into a bowl. If using corn kernels, prepare them as well.

Step 5
Beat Egg
If using egg, beat it first and set aside. Egg makes the corn sauce smoother.

Step 6
Heat Pan
Turn on medium heat. When the pan is hot, add cooking oil.

Step 7
Stir-fry Pork
Add the pork cubes and stir-fry until they change colour and are about 80% cooked. Remove them first and set aside.

Step 8
Cook Corn Sauce
In the same pan, add cream corn, corn kernels and half a bowl of water. Mix well and bring to a boil.

Step 9
Return Pork
Put the pork back into the pan. Turn to medium-low heat and cook for about 3 to 5 minutes until the pork is fully cooked.

Step 10
Add Egg
Slowly pour in the beaten egg while gently stirring so the egg spreads into small ribbons.

Step 11
Adjust Thickness and Taste
If the sauce is too thin, add a little cornstarch water. If it is too thick, add a little water. Taste at the end and add a little salt only if needed.

Step 12
Serve
Serve after confirming the pork is fully cooked. The corn sauce should be smooth with a little sauce for rice.
Common mistakes
- The pork cubes are cut too large, so the center is hard to cook through.
- The pork is stir-fried too long and becomes tough.
- The cream corn is cooked too dry, so it is not smooth with rice.
- Too much cornstarch water is added at once, making the sauce too thick.
- Salt is added too early and the dish may become too salty.
- The pork is not checked and may still be undercooked in the center.
Tips
The most important points are cutting the pork cubes evenly and not stir-frying them for too long. Cream corn already has sweetness and a little saltiness, so do not rush to add salt the first time. After cooking, ask Ma'am or Sir to taste it. Children usually like more sauce with rice, so do not reduce it too dry.
