Steps

Step 1
Preheat the oven
Preheat the oven to 200°C and prepare a roughly 23 cm baking dish.

Step 2
Dry the pork chops
Pat the pork chops dry and season both sides with salt and black pepper.

Slice apple and onion
Core and thickly slice the apples; cut the onion into thin wedges.

Step 4
Mix the mustard sauce
Whisk Dijon mustard, chicken stock, and thyme together in a small bowl.

Sear the first side
Heat half the oil and sear the first side of the pork chops over medium-high heat for 2 minutes.

Sear the second side
Turn and sear for another 2 minutes until lightly golden, then move to the baking dish.

Cook apple and onion
Add the remaining oil, apples, and onion to the same pan and cook for 5 minutes until slightly softened.

Add the mustard sauce
Pour in the mustard sauce, scrape up the pan juices, and boil for 1 minute.

Spoon the apples, onion, and mustard sauce evenly over the pork chops.

Rest the pork chops
