Herb-Roasted Pork Tenderloin with Apples

Steps

Step 1
Preheat the oven
Preheat to 200°C and line a baking tray.

Step 2
Trim and dry the pork
Remove silverskin from the pork and pat completely dry.

Step 3
Mix the herb rub
Mix mustard, chopped rosemary, garlic, salt and pepper.

Step 4
Coat the pork
Coat the whole pork tenderloin evenly with the herb rub.

Step 5
Cut apples and onion
Core apples and cut apples and onion into thick wedges.

Step 6
Sear the first side
Heat oil and sear the first side for 2 minutes.

Step 7
Sear the remaining sides
Turn and sear all remaining sides for 4 minutes total.

Step 8
Arrange apples and onion
Arrange apples and onion on the tray with pork in the centre.

Step 9
Roast the pork
Roast for 18 minutes until the centre reaches 63°C.

Step 10
Rest the pork
Transfer pork to the board, tent loosely with foil and rest for 5 minutes.

Step 11
Slice the pork
Slice the pork crosswise into 1.5 cm medallions.

Step 12
Serve with apples
Arrange pork slices with roasted apples and onion on a family platter.
Common mistakes
- Pork tenderloin dries out when overcooked; remove at 63°C and rest.
Tips
Cut apples into thick wedges so they keep their shape.
