- 600 g medium potatoes
- 2 piece bell pepper

Steps

Step 1
Preheat the oven
Preheat the oven to 200°C for exactly 10 minutes and keep the empty baking tray ready on the counter.

Step 2
Cut potato wedges
Wash and cut 600 g potatoes into even 3 cm wedges, then pat the surfaces dry.

Step 3
Cut peppers and onion
Deseed and cut both peppers into large pieces, cut the onion into thick wedges and finely chop all 3 garlic cloves.

Step 4
Season the potatoes
Toss the potatoes with 1 tablespoon olive oil, half the salt and half the black pepper until lightly coated.

Step 5
Roast potatoes first
Spread potatoes in one layer and roast for exactly 25 minutes, turning once at 12 minutes.

Step 6
Season the vegetables
Toss peppers, onion and garlic with the second tablespoon olive oil, oregano, and the remaining salt and black pepper.

Step 7
Check eight sausages
Confirm exactly 8 pre-cooked sausages, remove all packaging and pat them dry without piercing the skins.

Add sausages and vegetables
Remove the tray and arrange all 8 sausages, peppers and onion evenly among the partly cooked potatoes without stacking.

Step 9
Roast the full tray
Return the tray to the 200°C oven for exactly 15 minutes, turning the sausages and vegetables once at 7 minutes.

Step 10
Check browning
Check for browned sausages, crisp potato edges and tender peppers and onion; if pale, roast for 3 more minutes.

Step 11
Check sausage temperature
The thickest sausage must reach at least 75°C in the centre; if not, roast in 3-minute intervals and recheck.

Step 12
Rest and serve
Rest the tray for exactly 3 minutes, then transfer all 8 sausages, potatoes, peppers and onion to a white serving plate.
Common mistakes
- Starting the heat before mise en place is complete causes uneven doneness.
- Crowding the pan makes meat release water instead of browning evenly.
- Serving without checking the stated centre doneness or tasting the sauce.
Tips
Measure every ingredient by group before starting.
