Steps

Step 1
Cut silken tofu
Cut silken tofu: drain 600 g tofu inverted, cut eight large cubes and support each with a wide spatula.

Step 2
Julienne ginger
Julienne ginger: peel and cut 30 g ginger into very fine threads so it perfumes the low heat syrup.

Step 3
Measure hot water
Measure hot water: boil 250 ml water first and keep it beside the pan; never add cold water to caramel.

Step 4
Dry-caramelise sugar
Dry-caramelise sugar: put 100 g sugar in a small pan and heat medium 4 minutes until edges melt without stirring.

Step 5
Read caramel colour
Read caramel colour: swirl the pan until amber and nutty-smelling, then remove from heat before it turns bitter.

Step 6
Add water safely
Add water safely: off heat, add hot water in three portions with a long spoon while standing back from violent steam.

Step 7
Simmer ginger syrup
Return caramel to low heat, add ginger and a pinch of salt, and cook 2 minutes until clear with no hard sugar crystals.

Step 8
Warm tofu gently
Warm tofu gently: slide tofu cubes into syrup and cook lowest heat 5 minutes; syrup may only tremble, never boil.

Step 9
Turn without breaking
Turn without breaking: support each cube underneath with a wide spoon and turn once only while surfaces stay whole.

Step 10
Check dessert state
Check dessert state: tofu must be hot and silky, and syrup should coat a spoon lightly without tasting burnt.

Step 11
Bowl and sauce
Bowl and sauce: place two tofu cubes in each of four bowls and divide hot ginger syrup evenly.

Step 12
Cool before serving
Cool before serving: rest 3 minutes for children or older diners because freshly made syrup can burn mouths.
Common mistakes
- Taking caramel past amber into dark brown makes the syrup irreversibly bitter.
- Adding all the hot water at once causes violent splashing and hard sugar lumps.
- Boiling tofu breaks the delicate cubes and over-reduces the syrup.
- Turning tofu with tongs or pressing from above crushes its soft structure.
Tips
Remove amber caramel from the heat promptly because residual heat continues darkening it.
Add hot water in three portions down a long-handled spoon to reduce splashing and crystals.
Support tofu from underneath and turn only once; rest 3 minutes before serving children or older diners.
