Marinate food in the refrigerator

Keep meat, poultry, seafood, and other perishable food covered in the refrigerator throughout marinating.

High-priority reminder

Last reviewed: 2026-09-12

Marinate food in the refrigerator. Wrong action: Leaving raw food to marinate on the kitchen counter or above uncovered cooked food. Correct action: Marinate in a sealed container at 4°C or below, stored beneath ready-to-eat food.

Why it matters

Room-temperature marinating lets harmful bacteria multiply, while leaking marinade can contaminate ready-to-eat food.

Wrong action

Leaving raw food to marinate on the kitchen counter or above uncovered cooked food.

Correct action

Marinate in a sealed container at 4°C or below, stored beneath ready-to-eat food.

What to do

  1. Place raw food and marinade in a clean leak-proof container.
  2. Cover, label, and put it on the lowest suitable refrigerator shelf.
  3. Keep it chilled until cooking and discard marinade unless thoroughly cooked.

If something happens

If the refrigerator failed or food stayed warm for an unsafe period, do not taste it to test safety; discard it when in doubt.
