Steps

Step 1

Soak the soybeans

Rinse the dried soybeans, soak in plenty of water for 2 hours, then drain and discard the water.

Cover the ribs with cold water, bring to a boil and blanch for 3 minutes so scum rises.

Halve the bitter melon lengthwise, scrape out seeds and white pith, then cut into 3 cm pieces.

Wash and lightly crush the ginger, then cut into four slices.

Bring 2 litres of water to a full boil in a stockpot.

Common mistakes

  1. Unsoaked soybeans remain hard; soak for at least 2 hours and discard the soaking water.
