Black Pepper Beef Cubes with Potatoes

- 350 g potatoes
- 150 g onion
- 150 g green bell pepper
- 3 cloves garlic
Marinade
- 1 tbsp light soy sauce
- 1 tbsp oyster sauce
- 2 tsp cornstarch
- 1 tsp sesame oil
Sauce
- 2 tsp cracked black pepper
- 1 tsp dark soy sauce
- 1 tsp sugar
- 120 ml water

Steps

Step 1
Check and cut beef
Thaw beef in the refrigerator, inspect and cut into 2 cm cubes.

Step 2
Parboil potatoes
Peel and cut potatoes into 2 cm cubes, parboil until the outside softens, then drain. Time: 6 minutes.

Step 3
Prepare vegetables
Cut onion and green pepper into 2 cm pieces and mince garlic.

Step 4
Mix beef marinade
Mix light soy, oyster sauce, cornstarch and sesame oil.

Step 5
Marinate the beef
Coat beef cubes in marinade and refrigerate. Time: 15 minutes.

Step 6
Pan-fry potatoes
Heat half the oil and pan-fry potatoes until golden on several sides, then remove. Time: 6 minutes.

Step 7
Sear beef cubes
Add remaining oil and sear beef cubes in batches until browned outside. Time: 3 minutes.

Step 8
Saute onion and pepper
Saute garlic, then add onion and green pepper until slightly tender. Time: 2 minutes.

Step 9
Mix black pepper sauce
Mix black pepper, dark soy, sugar and water.

Step 10
Combine and glaze
Return beef and potatoes, add black pepper sauce and toss until glossy. Time: 3 minutes.

Step 11
Check beef doneness
Probe the largest beef cube with a thermometer and confirm it is cooked through. The centre must reach 75°C.

Step 12
Rest and serve
Turn off heat, rest briefly and serve on a plain white home plate. Time: 2 minutes.
Common mistakes
- Crowding the pan makes beef steam instead of sear.
- Wet potatoes cause oil splashes.
Tips
Cook beef and potatoes separately before combining.
Adding black pepper sauce late preserves aroma.
