Steps

Step 1
Cut the pomelo pith
Cut the prepared pomelo pith into 5 cm pieces and trim away any remaining green peel.

Step 2
Boil the pith once
Cover the pith with fresh water in a pot, boil for 10 minutes, then drain in a colander.

Step 3
Squeeze and reboil
When cool enough to handle, squeeze each piece dry, cover with fresh water and boil for another 10 minutes to reduce bitterness.

Step 4
Squeeze again
Drain the second water and press each piece gently with the back of a spoon until dry but still intact.

Step 5
Prepare the aromatics
Slice the ginger, mince the garlic and cut the spring onions into 5 cm lengths; measure 20 g shrimp roe separately.

Step 6
Fry ginger and garlic
Heat the cooking oil in a heavy pot over medium heat; fry ginger and garlic for 1 minute until fragrant, not browned.

Step 7
Pan-fry the pith
Add the pomelo pith and turn gently for 3 minutes until the surface is slightly dry and coated with aromatic oil.

Step 8
Add the braising liquid
Pour in 700 ml stock, oyster sauce, light soy and sugar; press the pith into the liquid and bring to a boil.

Step 9
Braise the pomelo pith
Reduce to low heat, cover and braise for 25 minutes, turning the pith gently once so it absorbs evenly.

Step 10
Add the shrimp roe
Sprinkle in 20 g shrimp roe, fold it through the liquid, cover and cook for 8 minutes.

Step 11
Reduce with spring onions
Uncover, add the spring onions and cook over medium heat for 5 minutes, leaving the soft pith juicy with a little sauce in the pot.

Step 12
Finish with sesame oil
Turn off the heat, drizzle over 1 teaspoon sesame oil, rest for 2 minutes and transfer the pith with shrimp-roe sauce to a clean deep plate.
Common mistakes
- Adding wet ingredients lowers the cooking temperature or causes splatter.
- Failing to measure seasoning first causes over-salting or omissions.
- Excessive heat burns the outside before the centre is cooked.
- Judging only by colour misses the thickest part or required texture.
Tips
Set out ingredients by purpose, keep raw pomelo pith and shrimp roe separate, and use time, appearance and temperature together to confirm completion.
