Cantonese Lotus Leaf Glutinous Rice Chicken — Fold the parcels

Step 10

Fold the parcels

Fold both sides inward, then fold the top and bottom into a tight square parcel; place seam-side down in the steamer.

Cantonese Lotus Leaf Glutinous Rice Chicken — Steam the parcels

Step 11

Steam the parcels

Once the water boils strongly, cover and steam over medium-high heat for 35 to 40 minutes, replenishing with boiling water if needed.

Cantonese Lotus Leaf Glutinous Rice Chicken — Check and serve

Step 12

Check and serve

Open one parcel; chicken must reach 74°C and rice must be fully soft. Steam 5 minutes more if needed, then rest 5 minutes before serving.

Common mistakes

  1. Not soaking the rice long enough, leaving a hard centre.
  2. Folding dry lotus leaves so they split.
  3. Overfilling parcels so they cannot close tightly.
  4. Starting with too little steaming water and letting the wok boil dry.

Tips

Soak the rice fully and stir it until the seasoning water is absorbed. Keep all four parcels similar in size, maintain boiling steam, and check both the thickest chicken piece and the rice centre.
