Filipino Caramelised Banana Turon

- 8 piece ripe saba bananas
- 16 piece lumpia wrappers
Seasoning
- 180 g brown sugar
- 2 tbsp water
- 700 ml cooking oil

Steps

Step 1
Peel the bananas
Peel the saba bananas and remove stringy fibres.

Step 2
Split the bananas
Split each banana lengthwise to make 16 even pieces.

Step 3
Coat with sugar
Roll every banana piece in brown sugar, pressing lightly to adhere.

Step 4
Separate the wrappers
Separate 16 wrappers and keep covered with a barely damp cloth.

Step 5
Place the banana
Set a wrapper corner toward you and place one sugared banana near the bottom.

Step 6
Fold in the sides
Fold the bottom over banana and tuck both sides inward tightly.

Step 7
Roll and seal
Roll into a tight cylinder, seal the tip lightly with water and repeat for 16.

Step 8
Heat the oil
Heat oil in a wok to 170°C.

Step 9
Fry seam-side down
Fry the first 4 rolls seam-side down for 2 minutes until sealed and pale golden.

Step 10
Turn and caramelise
Turn the first 4 and fry 2 to 3 minutes more; repeat steps 9 and 10 with the remaining 12 in batches of 4 until all 16 are golden with a thin caramel coat.

Step 11
Drain the rolls
Transfer to a metal rack without touching and drain 3 minutes.

Step 12
Cool and serve
Cool 2 minutes more until caramel sets, then serve whole.

- Do not skip the stated drying, preheating or resting stages; use the food-state and safe-temperature cues.
