Main ingredients
- 800 g beef brisket
- 1 piece onion
- 4 clove garlic
- 2 piece purple eggplants
- 200 g long beans
- 300 g Bok choy or choy sum, optional
Seasoning
- 1 tsp salt
- 1 tbsp Fish sauce
Sauce
- 180 g peanuts
- 2 tbsp annatto oil
- 2 tbsp cornstarch
- 80 ml water
Stock
- 1800 ml water
Garnish
- 2 tbsp shrimp paste

Steps

Step 1
Cut and rinse beef
Cut brisket into 4 cm pieces and rinse under cold water.

Step 2
Blanch the beef
Bring beef up from cold water, boil 3 minutes, drain and rinse away scum.

Step 3
Simmer the beef
Boil beef, onion and 1.8 litres water, skim, cover and simmer 75 minutes.

Step 4
Prepare the vegetables
Cut eggplant thickly, long beans into 8 cm lengths and wash the greens.

Step 5
Toast and grind peanuts
Dry-toast peanuts 6 minutes until fragrant, cool and grind finely.

Step 6
Make the annatto base
Heat annatto oil and sauté garlic 1 minute until fragrant without browning.

Step 7
Build the peanut sauce
Whisk in ground peanuts and 400 ml beef stock; add cornstarch mixed with 80 ml water gradually.

Step 8
Add the tender beef
When fork-tender, transfer beef to the peanut sauce and simmer 10 minutes.

Step 9
Cook the eggplant
Add eggplant, cover and simmer 6 minutes until just tender.

Step 10
Add the long beans
Add long beans and cook 4 minutes, keeping them green and slightly crisp.

Step 11
Add greens and season
Add greens, fish sauce and salt; cook 2 minutes until wilted and sauce coats the beef.

Step 12
Rest and serve
Rest off heat 5 minutes, serve, and place shrimp paste in a separate small dish alongside.

- Do not skip the stated drying, preheating or resting stages; use the food-state and safe-temperature cues.
