Steps

Step 1
Preheat oven to 180°C
Preheat the oven to 180°C and prepare an oven-safe round tin.

Step 2
Wash and wipe banana leaves
Wash and dry 2 banana leaves, then trim them large enough to cover the base and sides of the tin.

Step 3
Line the round tin with leaves
Line the round tin with the leaves, letting them rise slightly above the rim to prevent sticking.

Step 4
Mix rice flour, baking powder and salt
Combine 250 g rice flour, 2 tsp baking powder and 1/4 tsp salt, breaking up visible lumps.

Step 5
Whisk eggs and sugar
In another bowl, whisk 2 eggs with 100 g sugar until the sugar has mostly dissolved.

Step 6
Whisk in coconut milk
Add 300 ml coconut milk to the egg mixture and whisk until the colour is even.

Step 7
Fold wet and dry ingredients until smooth
Fold the dry mixture into the coconut milk mixture in batches until no dry flour or obvious lumps remain; avoid overmixing.

Step 8
Pour batter into lined tin
Pour the batter into the banana-leaf-lined tin and tap the tin lightly to release large bubbles.

Step 9
Bake until top starts setting
Bake at 180°C until the surface begins to set, then take it out briefly for the topping.

Step 10
Brush with butter and add coconut
Brush 20 g butter over the partly set surface and scatter 30 g grated coconut evenly.

Step 11
Bake until golden
Return to the 180°C oven and bake until golden on top and no longer wobbly at the centre.

Step 12
Check a skewer comes out clean; cool and slice
Insert a skewer into the centre; remove from the oven only when it comes out without wet batter, then cool slightly and cut into four.
Common mistakes
- Lumpy batter
- Wet centre
- Burnt banana leaf
Tips
Check the centre with a skewer, not colour alone.
