Steps

Step 1
Blanch beef for five minutes
Blanch 800 g bone-in beef shank in boiling water for about five minutes to remove blood foam.

Step 2
Rinse off scum
Lift out the beef and rinse off surface scum; use a clean stockpot for the final soup.

Step 3
Cut young jackfruit into chunks
Remove the hard core from 300 g young green jackfruit and cut it into similar small chunks.

Step 4
Bruise lemongrass and slice onion
Bruise the bases of 2 lemongrass stalks and slice 1 red onion.

Step 5
Place annatto oil, beef and water in the pot
Add 2 tbsp annatto oil, the beef and 2 L water to the stockpot, making sure the beef is submerged.

Step 6
Bring to boil and skim foam
Bring to a full boil and skim off the foam floating on top.

Step 7
Simmer beef until nearly tender
Lower to a gentle simmer until the beef is nearly tender and a fork enters with slight resistance.

Step 8
Add lemongrass and onion
Add the bruised lemongrass and sliced onion and simmer gently until fragrant.

Step 9
Add jackfruit and simmer until tender
Add the jackfruit and continue simmering until a fork passes through the pieces.

Step 10
Add tomato wedges and soften
Cut 2 tomatoes into wedges and add them until softened but not dissolved.

Step 11
Season with tamarind and fish sauce
Add 3 tbsp tamarind paste, 2 tbsp fish sauce and 1 red chilli; taste the sour-salty balance before adding any salt.

Step 12
Check beef tenderness and serve the soup hot. Keep the food core at or above 75°C for 30 seconds.
Confirm the beef core reaches at least 75°C for 30 seconds and is tender, then serve the soup and jackfruit hot in four bowls.
Common mistakes
- Tough beef
- Undercooked jackfruit
- Too much tamarind too early
