Steps

Step 1
Separate raw meats
Rinse bones, pork shoulder, heart and liver separately; keep raw utensils apart.

Step 2
Blanch bones
Blanch bones in boiling water 5 minutes; discard that water and rinse.

Step 3
Refill pot
Put the blanched bones and 2 litres clean water in a soup pot.

Step 4
Simmer broth
Add halved onion, simmer 45 minutes and skim the surface.

Step 5
Cook pork and heart
Add pork shoulder and heart; simmer about 25 minutes until cooked through.

Step 6
Cook liver fully
Add liver last and cook fully, with no bloody centre.

Step 7
Slice cooked meats
Lift out shoulder, heart and liver; slice each thinly.

Step 8
Fry garlic
Fry sliced garlic in a little oil until golden, then drain.

Step 9
Season broth
Strain out bones and solids; season broth with fish sauce, salt and white pepper.

Step 10
Cook noodles
Cook egg noodles separately until tender and drain.

Step 11
Assemble bowls
Divide noodles among four bowls and top with cooked pork, heart and liver.

Step 12
Pour broth and serve
Ladle over boiling-hot broth; add fried garlic, spring onions and pork cracklings just before serving.
Common mistakes
- Unblanched bones can leave the broth cloudy and strong-smelling.
- Undercooked or uneven liver pieces may remain bloody in the centre.
- Noodles left soaking in broth become soggy before serving.
Tips
Add liver last and cut the thickest slice to verify it is fully cooked. Boil noodles separately and add cracklings only just before serving.
