Steps

Step 1
Prepare steamer
Bring sufficient water to steady steam and wrap the lid to stop drips.

Step 2
Handle raw pork
Keep pork cold, use a dedicated bowl and utensils, and wash hands after contact.

Step 3
Mix the filling
Combine pork, carrot, pepper, raisins, eggs, crumbs and seasonings evenly.

Step 4
Test seasoning safely
Pan-cook one teaspoon until completely done before tasting; never taste raw mixture.

Step 5
Divide in two
Shape equal rectangles on two sheets of baking paper.

Step 6
Add the centres
Arrange cooked egg and sausage evenly down each centre, leaving 2 cm edges.

Step 7
Roll and seal
Use paper to form tight cylinders, twist ends and wrap securely in foil.

Step 8
Steam the rolls
Place apart in the steamer, cover and steam over medium heat for 45 minutes.

Step 9
Check doneness
Open one centre; it must reach 75°C. Rewrap, steam longer and recheck if needed.

Step 10
Rest to set
Rest wrapped for 10 minutes away from heat to retain juices and avoid steam burns.

Step 11
Unwrap and slice
Open carefully away from steam and use a clean knife to cut each roll into 8 slices.

Step 12
Divide safely
Share 16 slices among four; chill leftovers below 4°C within 2 hours.
Common mistakes
- Do not skip ingredient cleaning and safety checks.
- Do not use excessive heat that burns food before the centre cooks.
- Keep raw and cooked food and utensils separate.
- Do not leave the finished dish at room temperature.
Tips
Control heat, timing and texture in sequence, then adjust seasoning at the end.
