Steps

Step 1
Rinse okra
Rinse 600 g okra with colander and saucepan for 2 minutes until clean and fully drained.

Step 2
Dry okra thoroughly
Spread out 600 g okra, wipe every pod dry with a clean kitchen towel, then air-dry for about 10 minutes until no visible moisture remains before cutting; wet okra turns slimy.

Step 3
Cut okra
Cut 600 g okra, 200 g onion, 250 g tomatoes with cutting board and chef's knife for 6 minutes until evenly sized.

Step 4
Fry cumin seeds
Fry 1 tsp cumin seeds, 2 tbsp vegetable oil with frying pan and spatula over medium heat for 1 minute until fragrant without scorching.

Step 5
Fry okra
Fry 600 g okra in the frying pan over medium heat for 8 minutes until slightly softened but still crisp; transfer all the okra to the clean holding bowl, leaving the pan empty for step 6.

Step 6
Fry onion
Fry 200 g onion with frying pan and spatula over medium heat for 5 minutes until golden and set.

Step 7
Add minced ginger
Add 10 g minced ginger, 10 g minced garlic with frying pan and spatula over medium-low heat for 1 minute until fragrant without scorching.

Step 8
Reduce tomatoes
Reduce 250 g tomatoes, 2 tsp ground coriander, 1/2 tsp ground turmeric, 1/2 tsp chilli powder, 1 tsp salt with frying pan and spatula over medium heat for 5 minutes until the sauce coats the back of the spoon.

Step 9
Add okra
Add 600 g okra, 1 tsp amchur powder with frying pan and spatula over medium-low heat for 5 minutes until the liquid has evaporated without sticking.

Step 10
Check okra
Check 600 g okra, 250 g tomatoes with frying pan and spatula for 1 minute until slightly softened but still crisp.

Step 11
Rest okra
Rest 600 g okra, 200 g onion, 250 g tomatoes with white serving dish and wooden spoon for 2 minutes until the heat has settled and the food is safe to handle.

Step 12
Serve okra
Serve 600 g okra, 200 g onion and 250 g tomatoes in the white dish. It is ready when the okra is cooked but slightly crisp, dry masala clings evenly, no free liquid remains, and the okra is not slimy.
Common mistakes
- Failing to dry okra lowers the pan temperature and dilutes flavour.
- Changing the measured amount of cumin seeds unbalances the dish.
- Excessive heat overcooks the outside of okra before the centre reaches the required state.
- Serving without the final doneness check can leave okra undercooked or overcooked.
Tips
Measure and arrange every ingredient in step order. Clean the board and knife after handling okra, then judge completion by time, appearance and centre doneness.
