Main ingredients
- 400 g noodles
- 250 g chicken thighs
- 2 piece egg
- 200 g Cabbage
- 150 g bean sprouts
- 3 piece spring onion
Sauce
- 3 clove garlic
- 3 piece shallots
- 2 tbsp dark soy sauce
- 1 tbsp light soy sauce
- 1 tbsp oyster sauce
- 3 tbsp cooking oil
- 1/2 tsp white pepper
- 60 ml water

Steps

Step 1
Inspect Ingredients
Inspect all ingredients and keep raw chicken separate.

Step 2
Cut Ingredients
Cut chicken into 2 cm pieces, shred cabbage, and slice spring onions.

Step 3
Mix Sauce
Mix dark soy, light soy, oyster sauce, white pepper and water.

Step 4
Boil Noodles
Boil the noodles for 3–4 minutes until just tender.

Step 5
Drain Noodles
Drain the noodles thoroughly and loosen them.

Step 6
Cook Eggs
Heat 1 tablespoon oil and scramble the eggs for 90 seconds; transfer out.

Step 7
Cook Chicken
Add the remaining oil and cook chicken for 4–5 minutes until browned and 75°C.

Step 8
Saute Aromatics
Add garlic and shallots and stir-fry for 1 minute.

Step 9
Cook Cabbage
Add cabbage and stir-fry for 2 minutes.

Step 10
Toss Noodles
Add noodles and sauce and toss for 2–3 minutes until evenly coloured.

Step 11
Finish Vegetables
Return eggs, add bean sprouts and spring onions, and toss for 2 minutes.

Step 12
Serve
Serve immediately while the noodles are hot and separate.
Common mistakes
- Do not add every ingredient at once; follow the sequence so each component reaches the correct doneness.
Tips
Taste immediately before serving because prepared sauces vary in saltiness.
