Heat sesame oil on low, stir garlic 30 seconds, then add chicken when fragrant.

Add reserved 100 ml stock, salt and white pepper; cook 2 minutes more until thick but flowing.

Korean Chicken Dakjuk — Check heat

Korean Chicken Dakjuk — Serve

Step 12

Serve

Stir in spring onion and divide into 4 bowls; check temperature and piece size for children or older diners.

Common mistakes

  1. Raw rice will not soften on this schedule; cooked rice is required.
  2. Large chicken pieces cook slowly; dice to 5 mm.
  3. Unstirred rice scorches underneath; stir every 2 minutes.
  4. Reheating cannot rescue badly stored rice; use properly chilled rice.

Tips

This shortcut assumes cooked rice; cooking rice from raw adds time. Porridge thickens as it cools, so finish while it still flows. For a softer texture, gently mash grains with a spoon; this is not automatically a dysphagia meal. Lift rice from the bottom while stirring so chilled grains heat evenly throughout.
