Steps

Step 1
Rinse short-grain white rice
Rinse 300 g short-grain white rice under running water for about 2 minutes until the water is mostly clear, discard the rinsing water and drain fully; reserve the measured 360 ml cooking water for step 2.

Step 2
Cook short-grain white rice
Cook 300 g short-grain white rice with 360 ml water in the rice cooker for about 30 minutes, until the cycle finishes and the grains are cooked and fluffy without a scorched base; if the centres remain hard and the pot is dry, add 1 to 2 tbsp water and cook for 5 more minutes; if visible water remains, keep covered on warm for 5 minutes before checking again.

Step 3
Mix short-grain white rice
Mix 300 g short-grain white rice, 1 tbsp sesame oil, 1 tsp salt with large bowl and measuring spoons for 2 minutes until smooth and evenly combined.

Step 4
Blanch spinach
Blanch 200 g spinach in a saucepan of boiling water for 30 seconds until just wilted and bright green, then drain immediately in the colander and squeeze out excess water.

Step 5
Fry carrot
Heat 1 tsp neutral cooking oil in the frying pan over medium heat, then fry 120 g carrot with the spatula for 2 minutes until slightly softened but still crisp.

Step 6
Cook a thin omelette
Beat 3 eggs in a clean egg bowl separate from the rice bowl; heat the remaining 1 tsp neutral cooking oil in a non-stick frying pan over medium-low heat, pour in the eggs and cook a thin omelette for about 1 minute per side; use a food thermometer to confirm the centre reaches at least 75°C with no liquid egg.

Step 7
Cut cucumber
On a clean cutting board, cut 180 g cucumber, 5 strips Korean yellow pickled radish, 10 sticks crab sticks and the cooked 3-egg omelette into evenly sized long strips, about 5 minutes.

Step 8
Layer roasted seaweed
Layer 5 sheets roasted seaweed, 300 g short-grain white rice with bamboo rolling mat for 2 minutes until evenly sized.

Step 9
Layer cucumber
Layer 180 g cucumber, 5 strips Korean yellow pickled radish, 10 sticks crab sticks, 200 g spinach, 120 g carrot, 3 eggs with bamboo rolling mat for 2 minutes until evenly sized.

Step 10
Roll roasted seaweed
Roll 5 sheets roasted seaweed, 300 g short-grain white rice, 180 g cucumber, 5 strips Korean yellow pickled radish, 10 sticks crab sticks with bamboo rolling mat for 2 minutes until the seam stays underneath and the roll holds together.

Step 11
Brush oil and sprinkle sesame
Brush the 5 rolls lightly with the remaining 1 tbsp sesame oil, then sprinkle 1 tbsp white sesame seeds evenly over them, about 1 minute.

Step 12
Cut the 5 completed rolls
Place all 5 completed rolls seam-side down and cut them into even slices with the cutting board and chef's knife for about 3 minutes; every roll must visibly contain rice, cooked omelette, spinach, carrot, cucumber, Korean yellow pickled radish and crab sticks.
Common mistakes
- Failing to dry short-grain white rice lowers the pan temperature and dilutes flavour.
- Changing the measured amount of sesame oil unbalances the dish.
- Excessive heat overcooks the outside of short-grain white rice before the centre reaches the required state.
- Serving without the final doneness check can leave short-grain white rice undercooked or overcooked.
Tips
Measure and arrange every ingredient in step order. Clean the board and knife after handling short-grain white rice, then judge completion by time, appearance and centre doneness.
