Recipe overview
Hot rice is topped with separately seasoned beef, spinach, bean sprouts, carrot, mushrooms and fried egg, then mixed with gochujang.

Main ingredients
- 800 g cooked rice
- 250 g minced beef
- 200 g Spinach
- 200 g bean sprouts
- 1 piece carrot
- 150 g dried shiitake mushrooms
- 4 piece egg
- 3 clove garlic
Marinade
- 2 tbsp light soy sauce
- 1 tsp sugar
Sauce
- 4 tbsp gochujang
Seasoning
- 1 tbsp sesame oil
- 3 tbsp cooking oil

Steps

Step 1
Warm the rice
Warm the rice until fluffy and steaming, divide among four deep bowls and keep warm.

Step 2
Prepare the vegetables
Julienne the carrot, slice the mushrooms, cut the spinach into lengths and rinse the bean sprouts.

Step 3
Marinate the beef
Mix the beef with soy sauce, sugar, half the garlic and 1 teaspoon sesame oil; marinate 15 minutes.

Step 4
Blanch the spinach
Blanch the spinach for 45 seconds, drain, squeeze out excess water and toss with 1 teaspoon sesame oil.

Step 5
Cook the bean sprouts
Cook the bean sprouts in the same water for 2 minutes, drain and toss with the remaining 1 teaspoon sesame oil.

Step 6
Stir-fry the carrot
Add 1 tablespoon oil and stir-fry the carrot over medium heat for 2 minutes until just tender; remove.

Step 7
Stir-fry the mushrooms
Add the mushrooms and a little garlic and stir-fry for 3 minutes until tender and golden; remove.

Step 8
Cook the beef
Heat the pan and stir-fry the marinated beef for 4 to 5 minutes, breaking it up until browned, fully cooked and 71°C at the centre.

Step 9
Fry the eggs
Add the remaining oil and fry the eggs until the whites are set and yolks remain soft.

Step 10
Arrange the toppings
Arrange spinach, bean sprouts, carrot, mushrooms and beef in separate coloured sections over the hot rice.

Step 11
Add egg and gochujang
Place one fried egg in the centre of each bowl and add 1 tablespoon gochujang beside it.

Step 12
Mix and serve
Immediately before eating, mix the rice, toppings, yolk and gochujang thoroughly from the bottom.
Common mistakes
- Do not cook all toppings together; separate cooking preserves their colour, texture and doneness.
Tips
Use warm rice and add the chilli paste only at serving so every grain mixes evenly.
