Step 3
Drain
Drain medium potatoes thoroughly and shake off excess water gently without crushing.

Step 4
Cool
Spread medium potatoes out to cool for 5 minutes; do not cover while steam is escaping.

Step 5

Coat salmon fillet, salt, Black pepper evenly so every surface receives the seasoning.

Step 6
Heat cookware
Warm olive oil over medium heat and wait until ready before adding the next ingredients.

Step 7
Sauté
Pan-fry the salmon over medium heat for 4–5 minutes per side, turning once, for 8–10 minutes total until the centre is cooked through.

Step 8
Rest
Remove salmon fillet from heat and rest for 3 minutes so heat and juices settle.

Step 9
Cut ingredients
Cut cucumbers, spring onion, fresh dill into even, bite-size pieces on a stable board and keep each item separate.

Step 10
Mix
Combine plain yoghurt, lemons, fresh dill in a bowl until evenly distributed with no clumps.

Step 11
Assemble
Gently combine the potatoes, salmon, cucumber and spring onion in one large bowl, then fold in the prepared yoghurt-lemon-dill dressing until lightly coated; do not divide into serving bowls yet.

Step 12
Serve
Divide the completed salmon potato salad evenly into 4 portions and serve immediately.
