Stir-fried Okra with Scrambled Eggs

Whole okra is gently rubbed with salt to remove its natural fine fuzz, blanched whole, cooled in ice water and dried before 1-centimetre diagonal slicing. Its natural mucilage is normal, not spoilage. Eggs are lightly beaten, set to about 70%, while okra is dried in the pan first, then gently folded together. For children, older adults, pregnancy or weakened immunity, cook eggs until fully set.

- 1.5 litres, discarded blanching water

- 1/2 teaspoon Cooking oil (Optional)
Egg seasoning
- 1/4 teaspoon Salt
- 1/4 teaspoon Sugar (used for Egg seasoning)

Final okra seasoning
- 1/2 teaspoon Soy sauce
- 1/4 teaspoon Sugar (used for Final okra seasoning)
