Steps

Step 1
Reserve prawn shells
Peel and devein prawns; reserve heads and shells, and chill the flesh.

Step 2
Make prawn stock
Fry heads and shells in half the oil, add 1 litre water and simmer about 20 minutes.

Step 3
Strain stock
Strain the prawn stock and discard shells and heads.

Step 4
Soak vermicelli
Soak dried rice vermicelli until flexible and drain.

Step 5
Cut pork and squid
Slice pork belly thinly and cut cleaned squid into rings.

Step 6
Cook pork belly
Heat remaining oil in a wok; fry garlic and cook pork belly through.

Step 7
Add both noodles
Add yellow noodles and drained vermicelli; toss.

Step 8
Pour in stock
Add prawn stock, light soy sauce and fish sauce.

Step 9
Braise noodles
Braise over medium heat until noodles are tender and absorb most stock.

Step 10
Cook bean sprouts
Add bean sprouts and cook until hot but still crisp.

Step 11
Quick-cook seafood
Add prawns and squid; cook briefly until both are fully opaque.

Step 12
Finish and serve
Finish with white pepper and spring onions; serve immediately with lime wedges.
Common mistakes
- Discarding prawn heads and shells loses the characteristic stock flavour.
- Adding prawns and squid early makes them tough while noodles braise.
- Unsoaked vermicelli cooks unevenly beside yellow noodles.
Tips
Fry heads and shells before simmering stock. Add seafood only when noodles are nearly ready; stop once prawns and squid are fully opaque.
