Thai Beef Boat Noodles
泰式香料牛肉船麵

Recipe overview
This is a blood-free home version of boat noodles using prepared beef stock, spices, thin beef and cooked beef balls, not the traditional blood-thickened broth. The 35-minute cooking time assumes stock is already prepared.

Steps

Step 1
Soak noodles
Soak noodles in room-temperature water about 20 minutes as directed until pliable; drain for later cooking.

Step 2
Prepare aromatics and greens
Slice galangal, scrub and bruise coriander roots, reserve leaves; mince garlic, cut spinach and wash sprouts.

Step 3
Toast spices
Dry-toast cinnamon, star anise and coriander seeds over low heat for 1 minute, then place in a spice bag.

Step 4
Infuse stock
Add beef stock, spice bag, galangal and coriander roots; bring to a boil then simmer gently for 20 minutes.

Step 5
Make garlic oil
In the empty noodle pan, heat oil and garlic gently for 2–3 minutes until pale gold; pour into a heatproof bowl.

Step 6
Strain and season
Remove spice bag, galangal and roots; dissolve fish sauce, dark soy and palm sugar into broth and keep gently simmering.

Step 7
Heat beef balls
Simmer cooked beef balls in broth for 5–7 minutes until centres reach at least 75°C; meanwhile complete steps 8–9 for noodles and greens, and keep broth hot.

Step 8
Cook noodles separately
Bring fresh water to a boil in the noodle pan; cook noodles 1–2 minutes or as directed, drain into four bowls.

Step 9
Cook greens and sprouts
Cook spinach in noodle water for 1–2 minutes until stems soften, then sprouts separately 2 minutes until hot throughout; drain into bowls.

Step 10
Cook beef slices
Cook beef in two batches in gently simmering broth for 1–2 minutes, separating slices until opaque throughout and 75°C inside; lift into bowls.

Step 11
Add broth and balls
Divide beef balls among four bowls; bring broth back to a boil and ladle evenly over noodles and greens.

Step 12
Finish with garlic oil
Top each bowl with a quarter of the garlic oil and coriander leaves; serve hot with no hard spices left in soup.
Common mistakes
- Bones and water cannot become rich stock in 35 minutes; start with prepared stock.
- Noodles cloud beef broth; cook separately.
- Garlic turns bitter if removed dark brown; remove at pale gold.
- Thick beef becomes tough with extended cooking; use 2 mm slices in batches.
Tips
Boat noodles have many variants and some use blood for thickness; this version explicitly omits blood and has a different body and flavour. Prepared stock varies in salt, so add fish sauce gradually and taste. A spice bag keeps hard fragments out; remove garlic at pale gold because residual heat deepens its colour.
