Steps

Step 1
Prepare ingredients
On a raw-meat board, cut the 700 g boneless chicken thighs into 4 cm pieces; julienne the ginger, slice the shallots and mince the garlic separately.

Step 2
Dry chicken
Pat the chicken dry and trim to even sizes; immediately wash the knife, board and hands that touched raw chicken.

Step 3
Mix braising liquid
In a measuring jug, mix the 300 ml coconut water, 2 tablespoons fish sauce and 1/2 teaspoon black pepper.

Step 4
Make caramel
Heat 1 tablespoon oil in a heavy pot over medium-low heat; add the 3 tablespoons sugar and stir for 3–4 minutes until deep amber.

Step 5
Add chicken
Immediately add the chicken and turn quickly with a long wooden spoon for 1 minute so a thin caramel layer coats it without splashing.

Step 6
Colour chicken
Increase to medium heat, spread the chicken out and sear for 5 minutes, turning halfway, until lightly browned but not cooked through.

Step 7
Cook aromatics
Add the 80 g ginger, sliced shallots and minced garlic; stir-fry for 2 minutes until the ginger is fragrant and shallots soften.

Step 8
Add liquid
Slowly pour in the seasoned coconut water, scrape the caramelised pot base with the wooden spoon and bring to a gentle simmer.

Step 9
Braise
Reduce to low heat, cover and braise for 20 minutes, turning the chicken once and maintaining a gentle simmer.

Step 10
Check doneness
The thickest chicken piece must reach at least 75°C with no pink; cover and cook 3 minutes longer before checking again if needed.

Step 11
Reduce sauce
Uncover, increase to medium and cook for 8–10 minutes, turning occasionally, until the glossy sauce thickly coats the chicken.

Step 12
Serve
Turn off the heat, rest for 3 minutes, then transfer the ginger caramel chicken with a little sauce to a clean deep dish and serve hot.
Common mistakes
- Uneven pieces cook at different rates.
- Excess heat burns food before the centre is done.
- Shared raw and cooked utensils risk contamination.
- Seasoning before tasting can make food too salty.
Tips
Measure first; judge by colour, texture and safe centre doneness.
