Yunnan Steam-Pot Chicken
雲南汽鍋雞

Recipe overview
A central chimney admits steam that condenses into broth, so no water is added inside the steam pot. Chicken and ginger give a clean flavour; an ordinary sealed bowl is not equivalent.
01
Ingredients
Main ingredients
- 800 g Bone-in chicken pieces
- 20 g Ginger
- 20 g Spring onions
Chicken seasoning
- 10 ml Shaoxing wine
- 3 g Salt
- 0.5 g White pepper

02
Tools
- Central-chimney ceramic steam pot with matching lid
- Lower water pot fitting the steam-pot base securely
- Knife and board
- Oven gloves, hot-water kettle and thermometer

Steps

Step 1
Inspect the steam pot
Check for cracks and a clear central chimney. Ensure the base fits the lower pot securely, following the maker's instructions.

Step 2
Prepare chicken
Use 4 cm chicken pieces, remove loose bone fragments and excess fat, and pat dry without washing raw chicken.

Step 3
Cut aromatics
Thinly slice ginger; cut onion whites into long sections and greens into short pieces, reserving greens for the finish.

Step 4
Season chicken
Mix chicken with wine and salt, refrigerate 10 minutes and prepare hot water for the lower pot.

Step 5
Fill the steam pot
Put ginger and onion whites in the steam pot, then chicken, leaving space around the central chimney.

Step 6
Leave the interior water-free
Add the marinade and matching lid. Do not pour water inside; incoming steam will form the broth.

Step 7
Prepare lower water pot
Fill the lower pot to the maker's level and bring to a boil. Use a room-temperature steam pot to avoid thermal shock.

Step 8
Seat the steam pot
Using gloves, seat the steam pot securely over boiling water. Confirm steam passes through the chimney; never seal vents.

Step 9
Steam steadily
Maintain steady steam for about 90 minutes. Avoid repeatedly opening the inner lid, which loses steam and broth yield.

Step 10
Maintain lower water
Check the lower water level every 20–30 minutes and replenish with boiling water safely. Avoid dry heating and cold splashes on ceramic.

Step 11
Check chicken
Open carefully; thick flesh away from bone must reach 75°C and loosen easily. Steam another 10 minutes and retest if needed.

Step 12
Finish and serve
Add white pepper and onion greens; remove whites. Set the hot pot on a trivet with gloves and portion chicken with the condensed broth.
Common mistakes
- An ordinary sealed bowl lacks the steam inlet needed for this broth.
- Filling the inner pot with water changes the steam-pot method.
- Blocking the chimney prevents proper steam condensation.
- Dry lower pots and thermal shock can damage the cookware.
Tips
Use a real steam pot with its compatible lower vessel; wrapping an ordinary bowl tightly is not a substitute. Broth yield depends on steam flow, fit and duration. Ninety-five minutes is a timing guide, not a promised volume; if broth is scarce, check the steam path. Continue steaming until the chicken passes its doneness check.
