Ingredients
Main ingredients
- 600 g chicken (4 chicken breast pieces, about 150 g each)
- 4 slice cooked ham slices
- 4 slice Processed cheese slices —
Seasoning
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp Black pepper
Coating
- 60 g all-purpose flour
- 2 piece egg
- 120 g breadcrumbs

Steps

Step 1
Flatten the chicken
Place each of the 4 chicken breasts between plastic wrap and flatten to about 1 cm.

Step 2
Season the chicken
Season both sides of the chicken with salt and black pepper.

Step 3
Add ham and cheese
Place 1 ham slice and 1 cheese slice in the centre of each chicken piece, leaving clear edges.

Step 4
Roll the chicken
Fold in the sides and roll firmly into 4 chicken rolls, seam-side down.

Step 5
Prepare the coating
Put flour in the first dish, beat both eggs in the second, and put breadcrumbs in the third.

Step 6
Coat the rolls
Coat all 4 rolls in flour, egg and breadcrumbs in that order, pressing gently.

Step 7
Preheat the oven
Preheat the oven to 190°C and brush the baking dish with olive oil.

Step 8
Arrange the rolls
Arrange all 4 rolls seam-side down in the baking dish with space between them.

Step 9
Bake loosely covered
Loosely cover with baking paper and bake at 190°C for 15 minutes.

Step 10
Uncover and brown
Remove the paper and bake 10 minutes more until the coating is golden.

Step 11
Check doneness
From the side, check each roll reaches 75°C in its thickest chicken layer; if not, bake 2 minutes more at a time.

Step 12
Rest, slice and serve
Rest 5 minutes; keep 2 rolls whole and halve the other 2 before serving together.
Common mistakes
- Loose rolls leak cheese; fold in the sides, roll firmly and bake seam-side down.
Tips
Insert the thermometer from the side into the thickest chicken layer, not the cheese centre.
