Chicken Parmigiana with Tomato and Mozzarella

- 600 g chicken (4 chicken breast pieces, about 150 g each, flattened to 1.5 cm)
Sauce
- 300 g canned chopped tomatoes
Seasoning
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp Black pepper
- 3 tbsp olive oil
Coating
- 80 g all-purpose flour
- 2 piece egg
- 120 g breadcrumbs
- 40 g Parmesan
Garnish
- 160 g mozzarella cheese

Steps

Step 1
Flatten the chicken
Flatten all 4 chicken breast pieces evenly to about 1.5 cm thick.

Step 2
Season the chicken
Season both sides of the chicken with salt and black pepper.

Step 3
Prepare the coating
Put flour in one dish, beat the eggs in a second, and mix breadcrumbs with Parmesan in a third.

Step 4
Coat the cutlets
Coat each cutlet in flour, egg and breadcrumbs in that order, pressing gently.

Step 5
Preheat the oven
Preheat the oven to 200°C and lightly oil the baking dish with 1 tablespoon olive oil.

Step 6
Pan-fry the first side
Heat the remaining 2 tablespoons olive oil, fry the first batch of 2 cutlets for 2 minutes per side, 4 minutes total, then remove them.

Step 7
Pan-fry the second side
In the same pan, fry the remaining 2 cutlets for 2 minutes per side, 4 minutes total, then place all 4 cutlets in the baking dish.

Step 8
Add tomato sauce
Spread a thin layer of tomato sauce on each cutlet and sprinkle with oregano.

Step 9
Add mozzarella
Divide the mozzarella evenly over all 4 cutlets.

Step 10
Bake the cutlets
Bake at 200°C for 10 minutes.

Step 11
Check the temperature
Check that every cutlet reaches 75°C in the centre; if not, bake 2 minutes more at a time.

Step 12
Rest and serve
Rest for 3 minutes and serve family-style in the baking dish.
Common mistakes
- Uneven cutlets cook at different rates; flatten them to about 1.5 cm and check each one.
Tips
Use a modest layer of tomato sauce so the crumb coating stays crisp.
