- 2 piece onion
Marinade
- 80 ml calamansi juice
- 3 tbsp light soy sauce
- 3 clove garlic
- 1/2 tsp Black pepper
Seasoning
- 2 tbsp cooking oil
Sauce
- 1 tsp sugar
- 80 ml water

Steps

Step 1
Slice the beef
Slice beef across the grain into 3 mm strips.

Step 2
Mix the marinade
Mix calamansi juice, soy sauce, garlic and black pepper.

Step 3
Marinate beef
Coat beef with marinade and rest 30 minutes.

Step 4
Slice onions
Slice onions into 5 mm rings.

Step 5
Drain the beef
Drain beef and reserve all marinade.

Step 6
Sear first beef batch
Heat oil and sear half the beef 45 seconds per side.

Step 7
Sear remaining beef
Remove first batch and sear remaining beef the same way.

Step 8
Soften onions
Cook half the onions for 2 minutes until translucent at the edges.

Step 9
Simmer the sauce
Add reserved marinade, water and sugar; simmer 2 minutes.

Step 10
Return the beef
Return beef and toss 1 minute until just cooked.

Step 11
Add remaining onions
Add remaining raw onion rings and toss 30 seconds.

Step 12
Rest and serve
Rest off heat 2 minutes and plate with sauce.
