Main ingredients
- 1000 g chicken thighs
- 2 piece lemongrass stalks
- 30 g ginger
- 6 clove garlic
Seasoning
- 80 ml white vinegar
- 60 ml calamansi juice
- 3 tbsp Fish sauce
- 2 tbsp sugar
- 1 tsp Black pepper
- 1/2 tsp salt
Sauce
- 4 tbsp annatto oil
- 1 tbsp cooking oil

Steps

Step 1
Trim and dry the chicken
Trim excess fat, pat the thighs dry and make two shallow cuts in the thick flesh.

Step 2
Bruise the aromatics
Cut and bruise lemongrass, grate ginger and mince garlic.

Step 3
Mix the marinade
Stir vinegar, calamansi, 2 tablespoons fish sauce, 1 tablespoon sugar, pepper and aromatics until the sugar dissolves.

Step 4
Marinate the chicken
Coat the chicken, cover and refrigerate 4 hours, turning once halfway.

Step 5
Make the basting oil
Reserve 1/4 tablespoon cooking oil for the grill pan; mix the remaining 3/4 tablespoon with annatto oil, the remaining 1 tablespoon fish sauce and the remaining 1 tablespoon sugar for basting.

Step 6
Heat the grill pan
Preheat a ridged grill pan over medium-high heat for 5 minutes and brush with the reserved 1/4 tablespoon cooking oil.

Step 7
Drain the chicken
Lift chicken from marinade, remove loose aromatics and blot excess moisture.

Step 8
Grill the first side
Lay chicken skin-side down and grill 8 minutes until well marked.

Step 9
Turn and continue grilling
Turn, reduce to medium heat and grill 8 minutes more.

Step 10
Baste and finish
Baste both sides with annatto oil and grill 3 minutes per side until orange-golden and lightly charred.

Step 11
Check doneness
Check the thickest part reaches 74°C and juices run clear.

Step 12
Rest and serve
Rest off heat for 5 minutes, season evenly with the measured 1/2 teaspoon salt, then serve with the pan juices.
