In sequence cut red bell pepper 150 g into 2 cm pieces, halve mushrooms 150 g, dice onion 150 g and mince garlic 3 cloves.

Filipino Chicken Pastel — Sear chicken

Step 4

Sear chicken

Heat cooking oil 1 tbsp in the heavy pot over medium-high for 1 minute; sear chicken 700 g in one layer for 2 minutes per side until golden, then move to a clean plate.

Filipino Chicken Pastel — Cook onion and garlic

Step 5

Cook onion and garlic

Immediately add remaining cooking oil 1 tbsp, onion 150 g and garlic 3 cloves to the same pot; stir with the wooden spoon over medium heat for 2 minutes until softened.

Filipino Chicken Pastel — Cook the flour

Step 6

Cook the flour

Add plain flour 2 tbsp and stir continuously with the wooden spoon for 1 minute until it coats the onion with no dry flour.

Filipino Chicken Pastel — Build the sauce

Filipino Chicken Pastel — Check doneness

Step 11

Check doneness

Use the food thermometer to confirm the largest chicken piece reaches at least 75°C; potato must pierce easily and sauce coat the spoon, or simmer 2 minutes more.

Filipino Chicken Pastel — Rest and serve

Step 12

Rest and serve

Turn off the heat and rest chicken, potato, carrot, mushrooms and bell pepper in the heavy pot for 3 minutes, then transfer to a clean white serving bowl.

Common mistakes

  1. Crowding chicken makes it steam instead of brown.
  2. Using the raw-chicken board for vegetables risks cross-contamination.
  3. Adding stock all at once to flour creates lumps.
  4. Hard boiling after adding evaporated milk can split the sauce.

Tips

Add evaporated milk last over the lowest heat. If sauce is thick, add stock 1 tbsp at a time; if thin, cook uncovered for 2 minutes.
