Steps

Step 1
Inspect fish strips
Check each dried pollock strip and remove any hard bones or pieces, then tear into roughly 5 cm lengths.

Step 2
Soak pollock
Soak the strips in warm water in a clean bowl for about 20 minutes until soft.

Step 3
Drain and reserve water
Lift out and gently squeeze the pollock. Strain the soaking water and top it up with fresh water to about 1.2 L total.

Step 4
Cut ingredients
Thinly slice daikon, cube tofu to about 1.5 cm, chop spring onions and mince garlic.

Step 5
Beat eggs
Beat the two eggs in a bowl and set aside.

Step 6
Sauté pollock
Heat sesame oil in a medium pot over medium heat. Stir-fry pollock for about 2 minutes until fragrant.

Step 7
Add radish
Add daikon and stir-fry with the fish for about 2 minutes.

Step 8
Add water
Pour in strained soaking water and fresh water, add light soy sauce and bring to a boil.

Step 9
Simmer radish
Cover and simmer on medium-low for about 12 to 15 minutes until daikon is translucent and tender.

Step 10
Add tofu and garlic
Add tofu and minced garlic and cook for about 3 minutes. Stir gently to keep tofu intact.

Step 11
Pour in egg
Keep the soup gently bubbling and slowly drizzle in the beaten egg without stirring immediately. Cook for about 2 minutes until fully set.

Step 12
Add spring onions
Add chopped spring onions, taste and add a little salt if needed. Ladle into bowls and serve hot.
Common mistakes
- Cooking without checking for bones can leave hard pieces. Stirring vigorously right after adding egg breaks it into tiny grains instead of soft ribbons.
Tips
Buy deboned dried pollock strips but check again after soaking. Fish, egg, soy and wheat in soy sauce may cause allergies; watch for fish bones and hot soup when serving children or older adults.
