Lotus Root, Dried Octopus and Pork Bone Soup

Steps

Step 1
Rinse dried octopus
Rinse the dried octopus briefly in cold water to remove surface grit.

Step 2
Soak dried octopus
Soak the octopus in 500 ml cold water for twenty minutes, then discard the water.

Step 3
Blanch pork bones
Blanch the pork bones in boiling water for five minutes and skim the foam.

Step 4
Rinse the bones
Drain and rinse the bones until all foam is removed.

Step 5
Cut lotus root
Peel the lotus root and cut it into two-centimetre rounds.

Step 6
Cut the octopus
Pat the softened octopus dry and cut it into broad strips.

Step 7
Boil soup water
Bring 2500 ml water to a full boil in the stockpot.

Step 8
Add the main ingredients
Add the bones, lotus root, octopus and four ginger slices, then return to a boil.

Step 9
Boil uncovered
Boil uncovered for ten minutes and skim any new foam.

Step 10
Simmer the soup
Lower the heat, leave the lid slightly ajar and simmer for 120 minutes.

Step 11
Check tenderness and season
When the lotus root pierces easily and the pork is fully cooked, add one teaspoon salt and simmer five minutes.

Step 12
Ladle and serve
Turn off the heat and divide the soup, lotus root, pork and octopus among white bowls.
Common mistakes
- Changing the step order can cause uneven doneness and texture.
- Excessive heat or too little cooking time can dry the liquid or leave food undercooked.
- Using unwashed tools for both raw and cooked food increases cross-contamination risk.
