Steps

Step 1
Rinse and drain the chickpeas
Rinse all 400 g chickpeas under cold water until clear, then drain thoroughly so they do not dilute the caponata.

Step 2
Cut the eggplant into cubes
Trim all 600 g eggplant and cut it into even 2 cm cubes so the pieces brown yet remain intact.

Step 3
Prepare the olives, capers and raisins
Drain all 100 g black olives and 2 tablespoons capers, and measure all 50 g raisins into a separate bowl.

Step 4
Dissolve the sugar in the vinegar
Stir all 3 tablespoons white vinegar with 2 teaspoons sugar until the crystals dissolve completely.

Step 5
Heat the olive oil
Heat all 3 tablespoons olive oil in a wide frying pan over medium-high heat until shimmering but below smoking point.

Step 6
Brown the eggplant without crowding
Add the 600 g eggplant in one layer and cook over medium-high heat for 10 minutes, turning every 2 minutes, until golden on several sides and just tender.

Step 7
Cook the tomatoes until pulpy
Add all 300 g chopped tomatoes, reduce to medium heat, and simmer for 5 minutes, stirring twice, until the pieces collapse into a thick base.

Step 8
Add the chickpeas, olives and capers
Fold in the drained 400 g chickpeas, 100 g olives and 2 tablespoons capers without crushing the eggplant cubes.

Step 9
Add the raisins and sweet-sour mixture
Pour in the dissolved vinegar mixture and add all 50 g raisins; fold through once until the liquid reaches the pan bottom.

Step 10
Simmer until glossy and intact
Reduce to low heat and simmer uncovered for 12 minutes, folding gently every 4 minutes, until glossy with little free liquid and intact eggplant cubes.

Step 11
Rest the caponata to settle the flavour
Remove the pan from the heat and rest uncovered for 10 minutes so the vinegar mellows and the sauce thickens around the vegetables.

Step 12
Divide into four bowls
Spoon equal amounts of eggplant, chickpeas and glossy sauce into 4 bowls and serve warm or at room temperature.
Common mistakes
- Cutting eggplant too small makes it collapse during the final 12-minute simmer.
- Crowding eggplant in a small pan steams it instead of browning it.
- Stirring forcefully breaks the chickpeas and eggplant instead of keeping distinct pieces.
Tips
Cut eggplant into 2 cm cubes and brown without crowding for seared edges and soft centres.
Rest the caponata for 10 minutes so the vinegar mellows and the sweet-sour glaze clings.
