Steps

Step 1
Rinse and inspect bones
Rinse butcher-cut beef bones one by one and remove visible fragments; do not chop bones at home.

Step 2
Blanch bones
Blanch bones in boiling water 5 minutes; discard the water and rinse.

Step 3
Chop aromatics
Finely chop onions, garlic, ginger and tomatoes.

Step 4
Soften aromatics
Heat oil in a deep pot and soften onion, garlic and ginger.

Step 5
Fry chilli spices
Add chilli paste, coriander and cumin; fry until fragrant.

Step 6
Cook red tomato base
Stir in tomato paste and chopped tomatoes to make a thick red base.

Step 7
Add bones and water
Add blanched bones and 1 litre clean water.

Step 8
Skim the surface
Bring just to a simmer and skim off foam.

Step 9
Braise until tender
Cover and braise gently about 90 minutes until meat on the bones is tender.

Step 10
Thicken red gravy
Uncover and reduce until the red gravy is thick enough for dipping bread.

Step 11
Season and inspect
Taste with salt and sugar; check again for bone fragments.

Step 12
Serve with bread
Divide bones and red gravy into four portions and serve hot with bread.
Common mistakes
- Chopping unprepared large bones at home risks sharp splinters.
- Reducing sauce before bone meat softens leaves the meat tough.
- Adding too much water turns the intended thick gravy into thin soup.
Tips
Buy meaty marrow bones cut by a butcher and inspect them after blanching. Braise until meat softens before reducing the red gravy.
