Steps

Step 1
Sort okra
Discard blackened, soft or bad-smelling okra; keep firm green pods.

Step 2
Wash and dry okra
Rinse okra and dry every pod with kitchen paper.

Trim stem ends
Trim only the hard rim, keeping the top sealed and not cutting into the pod.

Step 4
Arrange for steaming
Arrange okra in one layer without overlapping.

Step 5
Preheat steamer
Add enough water and bring steamer to steady steam.

Steam okra
Steam covered 4โ5 minutes until bright green and just tender.

Check tenderness
Lift one pod; it should bend slightly without becoming mushy. Steam 1 minute more if firm.

Mix soy sauce
Mix soy, warm water and sugar until dissolved.

Warm the oil
Warm oil over low heat until fluid but not smoking.

Fragrance garlic
Cook garlic over low heat for 30 seconds until fragrant and pale gold.

Combine garlic soy
Turn off heat, carefully add soy mixture and stir into garlic sauce.

Sauce and serve
Transfer okra to a clean plate, spoon garlic soy along the centre and serve warm.
