Steps

Step 1
Cut and season the chicken
Pat the chicken dry, cut it into 4 cm pieces, and season all sides with the measured salt and pepper.

Step 2
Peel and cut the potatoes
Peel the potatoes and cut them into even 3 cm chunks so they finish cooking together.

Step 3
Dice the onion
Peel the onion and dice it into pieces about 1 cm wide.

Step 4
Chop the dill
Rinse and dry the dill, chop the fronds finely, and reserve them away from the heat.

Step 5
Brown the chicken
Melt half the butter over medium-high heat and brown the chicken in one layer for 5 minutes.

Step 6
Remove the chicken briefly
Lift the browned chicken onto a clean plate; it will finish cooking later in the sauce.

Step 7
Soften the onion in butter
Add the remaining butter and cook the onion over medium-low heat for 5 minutes until translucent.

Step 8
Stir in flour and stock
Stir in the flour for 1 minute, then gradually add stock while stirring until smooth.

Step 9
Add potatoes and chicken
Add the potatoes and browned chicken with their juices, keeping the pieces mostly beneath the stock.

Step 10
Simmer until tender and cooked
Cover and maintain a gentle simmer for 25 minutes, until the potatoes are tender and the chicken is cooked through.

Step 11
Stir in cream and dill
Lower the heat, stir in the cream and dill, and warm for 2 minutes without letting the sauce boil.

Step 12
Taste, rest briefly and serve
Taste for seasoning, rest off the heat for 3 minutes, and spoon chicken, potatoes and sauce evenly onto plates.
Common mistakes
- Boiling hard after adding cream can split the sauce and dull the dill.
Tips
Cook the potatoes until just tender, then fold in cream and dill off the hard boil.
