Thai Basil Minced Pork Rice with Fried Egg, Pad Kra Pao Moo Kai Dao, has separate rice, spicy pork and a Thai crispy-edged fried egg. Pad Kra Pao means a holy-basil stir-fry, Moo means pork and Kai Dao means fried egg. Holy basil is not mint; Thai basil is only a home substitute with a different aroma. Stir-fry pork dry and fully cook it to 71°C before reducing pre-mixed fish sauce, oyster sauce, soy sauce, dark soy sauce and sugar; add basil last. Set egg white completely, and fully cook yolks for high-risk diners.

  • 1 tablespoon oyster sauce
  • 1 tablespoon light soy sauce
  • 1/2 teaspoon dark soy sauce
  • 1 teaspoon sugar
  • 1/4 teaspoon white pepper

Pork stir-fry oil

  • 1 tablespoon cooking oil

Thai fried-egg oil

  • about 120 millilitres cooking oil

Final adjustment

  • up to 1 teaspoon fish sauce
  • up to 1/2 teaspoon sugar
