Steps

Step 1
Prepare the ingredients
Clean, drain and cut boneless pork chops, as specified in the ingredient list, then keep them separate.

Step 2
Mix the components
Season both sides of the pork chops with the salt needed, coat evenly with 1 tablespoon cornstarch and rest for 10 minutes.

Prepare the ingredients
Clean, drain and cut tomato, onion as specified in the ingredient list, then keep them separate.

Mix the components
Mix egg, cooked rice evenly while keeping the pieces intact, then set aside.

Step 5
Fry until evenly dry
Heat 1 tablespoon oil in a wok and stir-fry the egg and rice over medium-high heat for 5 minutes until the grains are separate and evenly hot.

Add the main ingredients
Spread the fried rice evenly in the baking dish and level it lightly; do not add a second portion of rice.

Step 7
Pan-sear the pork and preheat the oven
Preheat the oven to 200°C; meanwhile use the remaining 2 tablespoons oil to sear the pork chops for 4 minutes per side until browned outside but not fully cooked in the centre.

Sauté the ingredients
Add onion, tomato and cook over medium heat, stirring continuously, until fragrant and beginning to colour.

Simmer until cooked
Add tomato paste, sugar, water and maintain a gentle simmer for the timed duration until fully cooked without overcooking.

Add the main ingredients
Place the seared pork chops over the fried rice in the baking dish and spoon the cooked tomato-onion sauce evenly over them.

Bake until golden
Top with all 4 cheese slices and bake at 200°C for 12 minutes; check the thickest pork chop reaches 63°C at the centre.

Rest and serve
Rest in the baking dish for 3 minutes after removing from the oven, then portion and serve the pork chops with the rice and tomato sauce.
