Steps

Thai Khanom Krok Coconut Pancakes — Mix rice batter

Step 1

Mix rice batter

Mix rice batter: whisk rice flour, 50 g sugar, 1/8 tsp salt and 250 ml coconut milk until no dry lumps remain.

Thai Khanom Krok Coconut Pancakes — Rest batter

Step 2

Rest batter

Rest batter: cover and rest 10 minutes so rice flour hydrates, then whisk 10 seconds to even the thickness.

Thai Khanom Krok Coconut Pancakes — Mix coconut topping

Step 3

Mix coconut topping

Mix coconut topping: stir 150 ml coconut milk, 20 g sugar and remaining salt in a separate bowl; never combine it with batter.

Thai Khanom Krok Coconut Pancakes — Prepare toppings

Step 4

Prepare toppings

Prepare toppings: drain sweetcorn and finely slice spring onion, keeping both dry until needed.

Thai Khanom Krok Coconut Pancakes — Preheat well pan

Step 5

Preheat well pan

Preheat well pan: warm the takoyaki or well pan over medium-low heat for 4 minutes, then brush every well lightly with oil.

Thai Khanom Krok Coconut Pancakes — Fill batter wells

Step 6

Fill batter wells

Fill batter wells: pour rice batter to about seven-tenths depth and cook 3 minutes until edges no longer flow.

Thai Khanom Krok Coconut Pancakes — Check the base

Step 7

Check the base

Check the base: ease a bamboo pick around one edge; the underside should be pale gold while the centre remains slightly moist.

Thai Khanom Krok Coconut Pancakes — Add coconut topping

Step 8

Add coconut topping

Add coconut topping: spoon 1 teaspoon topping into each well without overflowing, then scatter corn and spring onion.

Thai Khanom Krok Coconut Pancakes — Cover to set

Step 9

Cover to set

Cover to set: cover and cook on low heat 4 minutes until topping stops moving and centre springs lightly when pressed.

Thai Khanom Krok Coconut Pancakes — Lift cooked halves

Step 10

Lift cooked halves

Lift cooked halves: loosen one half with a pick or small spatula only when its edge is crisp and base is gold.

Thai Khanom Krok Coconut Pancakes — Join two halves

Step 11

Join two halves

Join two halves: place two equally cooked halves topping-side together and press gently into one round pancake.

Thai Khanom Krok Coconut Pancakes — Serve warm

Step 12

Serve warm

Serve warm: cool 1 minute before serving; centres must be set, not runny, and test temperature before giving children.

Common mistakes

  1. Mixing the batter and coconut topping early removes the two-layer texture.
  2. Filling an unheated pan leaves pale soft bases that stick.
  3. Overfilling wells makes topping spill and glue the edges.
  4. Joining or serving pancakes with runny centres is unsafe for children.

Tips

For deeper takoyaki wells, fill batter only six-tenths deep and add 1 covered minute. Wipe away burnt sugar between rounds and brush a thin oil film for even colour. The coconut milk amounts are deliberately split between batter and topping.
