Thai Pineapple Fried Rice

- 900 g cold cooked rice (chilled and loosened)
- 300 g fresh pineapple (cut into 2 cm chunks and dried)
- 300 g peeled prawns (deveined and dried)
- 3 eggs
- 80 g cashews
- 1 carrot (finely diced)
- 120 g thawed green peas
- 4 spring onions (sliced)
- 3 cloves garlic (minced)
Seasoning
- 4 tbsp cooking oil
- 2 tsp curry powder
- 2 tbsp fish sauce
- 1 tbsp light soy sauce
- 1 tsp sugar
- to taste salt
- 1 tsp black pepper

Steps

Step 1
Inspect prawns
Thaw prawns fully in the refrigerator, discard any smelly or slimy ones, devein and pat dry.

Step 2
Loosen rice
Break up 900 g chilled cooked rice with clean fingers or a spatula, removing large clumps.

Step 3
Prepare produce
Cut pineapple into 2 cm chunks and dry; finely dice carrot, slice spring onions and mince garlic.

Step 4
Mix seasoning
Mix 2 tablespoons fish sauce, 1 tablespoon light soy, 1 teaspoon sugar and 1 teaspoon pepper.

Step 5
Toast cashews
Toast 80 g cashews in a dry wok for 3 minutes until golden; remove.

Step 6
Cook prawns
Add 1 tablespoon oil and stir-fry 300 g prawns for 3 minutes until opaque and curled; remove.

Step 7
Scramble eggs
Add 1 tablespoon oil, crack in 3 eggs and scramble for 1 minute until just set; remove.

Step 8
Fry garlic and carrot
Add 1 tablespoon oil, fry garlic 20 seconds, then stir-fry carrot for 2 minutes.

Step 9
Fry rice
Add remaining 1 tablespoon oil, rice and 2 teaspoons curry powder; stir-fry 4 minutes until grains separate.

Step 10
Add pineapple and peas
Add 300 g pineapple and 120 g peas; stir-fry for 2 minutes.

Step 11
Return prawns and eggs
Return prawns and egg, add all seasoning and toss 2 minutes until prawns are piping hot.

Step 12
Finish and serve
Turn off heat, fold in spring onions and cashews, taste and add salt only if needed, then serve.
Common mistakes
- Warm rice clumps and turns soft.
- Wet pineapple makes the rice soggy.
Tips
Chill rice overnight and loosen it first.
Return cashews only at the end to keep them crisp.
