Steps

Step 1
Prepare the ingredients
Clean, drain and cut cooked rice as specified in the ingredient list, then keep them separate.

Step 2
Mix the components
Mix egg evenly while keeping the pieces intact, then set aside.

Clean, drain and cut Char siu as specified in the ingredient list, then keep them separate.

Clean, drain and cut dried shrimp as specified in the ingredient list, then keep them separate.

Preheat the cookware over medium heat, add cooking oil, and wait for a light shimmer without smoking.

Add egg and toss briskly over medium-high heat so every portion heats evenly without clumping.

Add Char siu, dried shrimp, carrot and cook over medium heat, stirring continuously, until fragrant and beginning to colour.

Add Thawed green peas and fold gently from the bottom so the heat and seasoning are distributed evenly.

Add cooked rice and toss briskly over medium-high heat so every portion heats evenly without clumping.

Adjust the seasoning
Add light soy sauce, salt, white pepper, mix evenly, taste, and make only the adjustment that is needed.

Rest and serve
Turn off the heat, add all the sliced spring onion and toss for 10 seconds to distribute it evenly, then serve on a warm plate.
