Steps

Cantonese Pan-Fried Yellow Croaker — Clean the croaker

Step 1

Clean the croaker

First use a kitchen knife on a chopping board to scale and gut 1 yellow croaker of about 600 g; after about 3 minutes the cavity should have no blood clots.

Cantonese Pan-Fried Yellow Croaker — Dry and score

Step 2

Dry and score

Next press the whole croaker dry inside and out with kitchen paper, then use the knife to make 2 cuts per side; after about 2 minutes the fish should be dry with no cut exposing bone.

Cantonese Pan-Fried Yellow Croaker — Salt the fish

Step 3

Salt the fish

Rub 1/2 tsp salt evenly inside and over the croaker on the raw-fish board, then rest 5 minutes; the surface should remain dry with no puddle.

Cantonese Pan-Fried Yellow Croaker — Dust with cornstarch

Step 4

Dust with cornstarch

Use a tablespoon to dust both sides of the whole croaker with 1 tbsp cornstarch, shake off loose powder, then immediately wash and disinfect the board, knife and spoon that touched the raw fish; only a thin even coat should remain.

Cantonese Pan-Fried Yellow Croaker — Cut aromatics and mix sauce

Step 5

Cut aromatics and mix sauce

On a clean vegetable board, use the cleaned knife to shred 20 g ginger and cut 2 spring onions; in a small bowl mix 1 tbsp soy sauce, 1 tsp sugar, 1 tbsp Shaoxing wine and 100 ml water for about 2 minutes until sugar dissolves.

Cantonese Pan-Fried Yellow Croaker — Heat the oil

Step 6

Heat the oil

Heat 2 tbsp cooking oil in the large frying pan over medium heat for about 1 minute; add fish only when the oil shimmers without smoking.

Cantonese Pan-Fried Yellow Croaker — Fry the first side

Step 7

Fry the first side

Place the croaker in the frying pan and cook undisturbed over medium heat for 4 minutes, until the skin edge is golden and releases naturally.

Cantonese Pan-Fried Yellow Croaker — Fry the second side

Step 8

Fry the second side

Use a spatula to turn the whole croaker carefully and fry over medium heat for 3 minutes, until the second skin side is golden and intact.

Cantonese Pan-Fried Yellow Croaker — Fry the ginger

Step 9

Fry the ginger

Add 20 g shredded ginger beside the fish and fry in the pan for 30 seconds, waiting until lightly golden and fragrant before pouring sauce.

Cantonese Pan-Fried Yellow Croaker — Cover with sauce

Step 10

Cover with sauce

Pour the 100 ml soy mixture from the bowl around the fish, cover and simmer over medium-low heat for 3 minutes; the sauce should bubble gently and the fish remain intact.

Cantonese Pan-Fried Yellow Croaker — Check and add onions

Step 11

Check and add onions

Uncover, add the 2 cut spring onions and 1 tsp sesame oil, then use a thermometer in the thickest flesh; turn off when it reaches 75°C, is fully opaque and flakes from bone.

Cantonese Pan-Fried Yellow Croaker — Spoon sauce and plate

Step 12

Spoon sauce and plate

After turning off the heat, spoon pan sauce over the fish for 30 seconds, then lift it with the spatula; the skin should be golden and intact under a thin glossy sauce.

Common mistakes

  1. Frying a wet fish makes the skin stick.
  2. A thick cornstarch coat turns the sauce pasty.
  3. Forcing the fish to turn before its skin releases tears it.
  4. Checking only the skin can leave the thickest flesh undercooked.

Tips

Use a pan that holds the fish flat. Dry it thoroughly, dust lightly, and wait for the first side to release before turning; confirm 75°C or fully opaque flesh that flakes from bone.
