Steps

Step 1
Preheat the oven
Preheat the oven to 210°C and prepare a roughly 23 cm baking dish.

Step 2
Cut the cauliflower
Cut cauliflower into even 4 cm florets and thinly slice the thick stem.

Boil the cauliflower
Boil the cauliflower for 5 minutes until just tender but still firm.

Drain thoroughly
Drain in a colander for 5 minutes, shaking out water trapped in the florets.

Cook butter and flour
Melt butter over medium heat, add flour, and stir for 1 minute to make a smooth roux.

Whisk in the milk
