Steps

Step 1

Wash the romaine leaves, dry them completely and tear into 5 cm pieces.

Step 2
Make the dressing base
Finely chop the anchovies and garlic, then whisk with mayonnaise, mustard and lemon juice.

Step 3
Finish the dressing
Whisk half the Parmesan and half the black pepper into the dressing.

Step 4
Season the chicken
Pat both chicken breasts dry and season with salt and the remaining black pepper.

Step 5
Cook the first side
Heat olive oil and cook the first side of both chicken breasts over medium heat for 5 minutes.

Step 6
Turn and cook through
Turn and cook 5 minutes more until the centres reach 75°C.

Step 7
Rest the chicken
Rest the chicken breasts on a clean board for 5 minutes.

Step 8
Slice the chicken
Slice both chicken breasts across the grain into about 1 cm pieces.

Step 9
Dress the romaine
Put the romaine in a large bowl and toss gently with two-thirds of the dressing.

Step 10
Add croutons
Add the croutons and toss a few times without crushing them.

Step 11
Arrange the chicken
Arrange the sliced chicken evenly over the salad and drizzle with the remaining dressing.

Step 12
Finish and serve
Sprinkle with the remaining Parmesan and serve immediately in the large salad bowl.
Common mistakes
- Wet lettuce dilutes the dressing; dry it thoroughly after washing.
Tips
Rest the chicken before slicing so it keeps its juices and does not overheat the salad.
