Steps

Step 1
Prepare ingredients
Rinse and scrub the mussels, discard any cracked mussels and any that do not close when tapped, remove the beards, drain and keep separate.

Step 2
Cut ingredients
Cut leek, garlic, parsley into even, bite-size pieces on a stable board and keep each item separate.

Step 3
Heat cookware
Warm unsalted butter over medium heat and wait until ready before adding the next ingredients.

Step 4
Sauté
Cook leek over medium heat for 4 minutes, stirring until softened or aromatic without scorching.

Step 5
Add ingredients
Add the garlic and cook for 1 minute until aromatic but not browned.

Step 6
Add ingredients
Add mussels and spread evenly so the ingredients remain in the correct state for this step.

Step 7
Steam covered
Cover the mussels in the same beige enamel pot and steam for 5 minutes; lift the lid away from yourself so the steam escapes safely.

Step 8
Check doneness
Check that the mussels have opened and are fully cooked; discard any mussel that remains closed after cooking and never force it open or serve it.

Step 9
Mix
Combine cooking cream, Dijon mustard in a bowl until evenly distributed with no clumps.

Step 10
Simmer
Bring mussels, cooking cream, Dijon mustard to a gentle simmer for 3 minutes, stirring lightly and keeping the heat steady.

Step 11
Finish seasoning
Add lemons, parsley, salt, Black pepper as the final seasoning, toss gently and taste immediately.

Step 12
Serve
Divide mussels, cooking cream, leek into four portions and serve at its best eating temperature.
Common mistakes
- Never serve cracked mussels, mussels that do not close when tapped, or mussels that remain closed after cooking.
- Do not skip draining or drying, or the finished dish may become watery.
