Greek Baked Shrimp with Tomato and Feta

- 600 g prawn
- 150 g feta cheese
Sauce
- 500 g tomato
- 1 tbsp tomato paste
- 1 piece onion
- 3 clove garlic

- 1 tsp dried oregano
- 2 tbsp cooking oil
- 1 tsp salt
- 1 tsp Black pepper
Garnish
- 2 tbsp parsley

Steps

Step 1
Preheat oven
Preheat the oven to 220°C with the rack centred.

Step 2
Dry and season shrimp
Pat shrimp dry and toss with half the salt and pepper.

Step 3
Chop aromatics
Finely chop the onion, garlic and parsley separately.

Step 4
Soften onion
Heat oil and soften onion for three minutes.

Step 5
Add garlic and oregano
Stir in garlic and oregano for one minute.

Step 6
Build tomato sauce
Add tomatoes, tomato paste and the remaining half of the salt and pepper; simmer five minutes.

Step 7
Arrange shrimp
Arrange shrimp in one layer over the hot tomato sauce.

Step 8
Crumble feta
Crumble feta evenly over the shrimp.

Step 9
Bake five minutes
Bake uncovered for five minutes.

Step 10
Rotate and finish
Rotate the pan and bake four to five minutes more.

Step 11
Check shrimp
Remove once shrimp are curled and fully opaque; do not overcook.

Step 12
Garnish and serve
Scatter parsley and serve immediately with the hot tomato-feta sauce.
Common mistakes
- Starting the heat before mise en place is complete can cause uneven doneness.
- Using the wrong heat or ignoring the stated time can spoil the sauce, meat or vegetable texture.
- Using unwashed tools for raw and cooked food increases cross-contamination risk.
